Healthy Hearty Crock Pot Minestrone Soup 🍲

It’s starting to feel just a little like Fall around here! And it has me craving one of my favorite recipes ever! This will be a HIT in your home! Let me know those that tries this recipe and comment on how much you loved it!

Prep Time 20 minutes

Cook Time 6-8 hours

INGREDIENTS

* 1 15 oz can white beans, drained, rinsed (cannelloni or navy)

* 32 oz container redused sodium chicken broth, or vegetable broth for vegetarians

* 2 tsp olive oil

* 1/2 cup chopped onion 

* 1 cup diced carrots

* 1/2 cup diced celery

* 2 garlic cloves, minced

* 1 29oz can petite diced tomatoes

* Parmesan cheese rind

* 1 fresh rosemary sprig

* 2 bay leaves

* 2 tbsp chopped fresh basil

* 1/4 cup chopped fresh Italian parsley

* 1/2 tsp sea salt 

* 1/2 tsp black pepper

* 1 large zucchini, diced

* 2 cups chopped fresh spinach

* Small pasta such as ditalini

* Cooked Turkey Meatballs fresh or frozen

* Extra fresh parmesan cheese for garnish

INSTRUCTIONS

1.  Puree beans with 1 cup of the broth in a blender.  (Hides the beans from the kids to see but has the nutrients and thickens the broth!…You’re Welcome!) Then Heat oil in a large nonstick skillet over medium-high heat. Add the olive oil, garlic, carrots, celery, onion, and sauce until tender and fragrant, about 15 minutes. 

2. Transfer to the crock pit along with the remaining broth, tomatoes, pureed beans, parmesan cheese rind, salt and pepper.  Add the rosemary, bay leaves, basil and parsley, cover and cook on low for 6 to 8 hours. 

3. Forty minutes before the soup is done cooking, add zucchini, spinach and cooked Turkey Meatballs. I like the ones that have added parmesean cheese inside. I find at Publix! Cover and cook 30 more minutes.  Remove bay leaves, rosemary sprig, parmesan rind and season to taste with salt and pepper.  

4. Boil Ditalini pasta till all dente.  

5. Ladle 1-1/4 cps soup into bows with 1/4 cup pasta and top with fresh parmesan shredded cheese.  I serve with cracked pepper crackers!

FYI this is a skinny recipe.  So only 190 calories then if you add the turkey meatballs (which I do) then only a little more and more protein!! 🙌🏼👏🏼

Fall Nails

Can you believe FALL is here?!!  With the first day of fall officially starting tomorrow I was inspired to post about one of my favorite Fall Nail Trends. 🙂

Dark Nail Polish

All spring and summer I wear a soft light pink or french manicure but the minute there is a nip in the air and fall arrives I am onto my dark nail polish.  I’ve really fallen in love with Gel Nails.  Being a very active mother and washing my hands all the time to stay healthy, regular nail polish just doesn’t last that long.  Doesn’t mean I don’t love regular nail polish, I wear it on my toes, sometimes on my finger nails, as well I apply the regular nail polish on top of my gel nails if I want to switch it up a bit. 🙂  The color on my nails in the picture (taken in direct sunlight) to the left is a new color from Gelish named Jet Set.  It is a dark grey purple.  It’s GORGEOUS!!  You can get it at most Sally’s Beauty Supply stores or if your manicurist carries Gelish colors ask for Jet Set.  Or another great fall/winter Gelish color is Bella’s Vampire, or Strutt Your Stuff (Had to get that one on amazon.com)  There are many great colors out there, but these are just a few!
